Low Carb Mexican Pizza - Keto, Gluten Free

Buenos dias! (As someone who took many, many years of French class, this pretty much starts and ends my Spanish vocabulary.) At the moment, I am having a complete flashback to fifth grade, walking into the school cafeteria with low expectations as to what would be served for lunch on that signature green plastic tray with its individual compartments.  On this particular day, the lunch line was longer than usual, and there seemed to be anticipation in the air about the meal of the day.  And then I realized why -- it was Fiestada Day!  Hooray!

Did you experience the deliciousness known as the fiestada in your school?  A little pizza stacked with taco sauce, seasoned ground beef, and melted cheddar cheese?  It was like a taco on a slab of pizza dough, and it's one of about three hot lunches that my fellow tweens and I enjoyed.  Ours was actually a hexagon shape, which surely came mass-produced from a factory somewhere, trucked across the country and destined for those infamous trays.  Okay, I think we've established that school lunches in America need some help in the real food department.  But I got to thinking about that delicious fiestada (where do they come up with these names?) and decided to recreate the flavors in a low carb, real food way.  And the results were amazing.  My husband thought I was secretly feeding him high carb goodies!

The base crust is completely inspired by the Fathead pizza crust recipe that is a favorite of low carbers everywhere.  I've been playing with variations on the mozzarella base since falling in love with the Up Late Anyway cheese danish recipe, which is also loosely based on that dough.  The rest is a stack of delicious and healthy Mexican-inspired pizza toppings.  I kept the freeform round dough shape intact, but was thinking I would recreate the hexagon for old times' sake, if for no other reason that to fill my mouth with the scraps of cheesy dough as I cut.  I hope you enjoy this as much as we did!

LOW CARB MEXICAN PIZZA

Yield: 2 servings

INGREDIENTS

  • ½ pound ground beef, 85% lean
  • 1 tbsp extra virgin olive oil
  • 1 tbsp chopped yellow onion
  • 1 clove garlic, chopped
  • 1 egg
  • 2 oz cream cheese, softened
  • 6 oz whole milk mozzarella cheese (don’t use fresh – you want a firmer bite for this)
  • 1 cup grated cheddar or monterey jack cheese
  • 3/4 cup almond flour
  • 2 tbsp diced green pepper
  • ¼ cup taco sauce (check the labels to make sure this is low carb)
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp chopped green onion
  • salt and pepper to taste
  • ½ tbsp. chili powder
  • ½ tbsp. cumin
  • ½ tbsp. paprika
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp oregano
  • ¼ tsp coriander
  • ¼ tsp cayenne pepper

PREPARATION

-Preheat oven to 400 degrees.  Mix all spices together and set aside. This will serve as your seasoning for the ground beef.

-Heat 1 tbsp olive oil in a skillet over medium high heat.  Add onions and garlic and cook for 1-2 minutes until fragrant, taking care not to burn.  Add ground beef to the pan and cook until all pink is removed from the meat, 4-5 minutes.  While the meat is cooking, stir in the spice mixture so that it coats the beef.

-To prepare the dough, placed the shredded mozzarella cheese in a microwave safe dish and cook on medium power for one minute, until the cheese is melted.  Add the almond flour, softened cream cheese and egg.  Season with salt and pepper. Stir to combine thoroughly. 

-Rub your hands with a bit of olive oil so they don’t stick to the dough, and flatten the dough onto a parchment paper lined baking sheet.  Drizzle with 1 tbsp olive oil.  Bake for 10 minutes, or until edges begin to brown.

-Remove baked crust from oven.  Top with taco sauce, leaving 1/2 inch around the edges without sauce. Sprinkle the seasoned ground beef across the pizza.  Top with green pepper and sprinkle with cheddar cheese to evenly coat the top of the pizza.  Return to oven for 6 minutes, until cheese is bubbling.  Sprinkle with green onion and cilantro.  Serve and enjoy!
